...yes, I know this. (With the attribute "hardcoded" I mean that the full
path to the icon is always defined (ICONDIR)).

Anyway, as I said, the 'unkown' icon is assigned to the the mime type
application/bluefish-project.

This does not make any difference. The problem isn't related to the
icon theme stuff. bluefish-unstable works as expected if I delete the
icons of $datadir/icons/gnome/48x48/mimetypes

As I understand, icon themes are additional and at first the icons
of /usr/share/pixmaps are used.

I have found only this discrepancy...
bluefish/data/bluefish.keys at line number 51 defines:
"icon_filename=gnome-application-bluefish.png"

bluefish/data/Makefile (line number 81) changes the file name:
$(INSTALL_DATA) gnome-application-bluefish.png \
$(DESTDIR)$(ICONPATH)/gnome-application-bluefish-project.png
